This is our delicious go to snacks – perfect for kids lunches.
Ingredients:
2.5 cups of any nut / seed flour / any combination (we use 1 cup pumpkin seed flour and 1.5 cup almond nut flour)
100g butter (salted)
¾ cup coconut sugar (or honey)
1 teaspoon bicarb soda
8-9 eggs
1 teaspoon vanilla essence (optional)
Instructions:
Add all ingredients together and blend until smooth (about 30 secs in Thermomix or any blender).
If the mix quite runny then pour into greased muffin trays, if the mix is quite stiff then add an egg.
Bake in preheated oven at 180 degrees celcius for approximately 18 mins, muffins are cooked when a chopstick comes out dry.
Enjoy!! Serve with delicious kefir sour cream and frozen cherries.
