How To Make Paleo Muffins With just 5 Ingredients

⁣⁣⁣⁣⁣This is our delicious go to snacks – perfect for kids lunches.

Ingredients:

2.5 cups of any nut / seed flour / any combination (we use 1 cup pumpkin seed flour and 1.5 cup almond nut flour)⁣⁣⁣⁣⁣

100g butter (salted)⁣⁣⁣⁣⁣

¾ cup coconut sugar⁣⁣⁣⁣⁣ (or honey)

1 teaspoon bicarb soda⁣⁣⁣⁣⁣

8-9 eggs⁣⁣⁣⁣⁣

1 teaspoon vanilla essence (optional)

Instructions:

⁣⁣⁣⁣⁣⁣⁣⁣Add all ingredients together and blend until smooth (about 30 secs in Thermomix or any blender).

⁣⁣⁣⁣⁣⁣⁣If the mix quite runny then pour into greased muffin trays, if the mix is quite stiff then add an egg. ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣

Bake in preheated oven at 180 degrees celcius for approximately 18 mins, muffins are cooked when a chopstick comes out dry.

Enjoy!! Serve with delicious kefir sour cream and frozen cherries.
